S'MAC, the all-mac 'n cheese, all-the-time eatery in the East Village was born after a husband-and-wife engineering duo moved to the city from New Hampshire; they just wanted the thrill of living in Manhattan. But after seeing single-food standouts like Peanut Butter & Co., they thought "Why isn't there any place that does just mac 'n cheese?" Luckily, that's a question we'll never need to ask again. Lest you think the menu is somewhat limited, take note: this joint offers up 12 different takes on the simple dish including gluten-free and vegan options. The Alpine pairs gruyere cheese with thick slabs of bacon; the Parisienne is "Mac-n-Cheese for the upper crust," with creamy brie, roasted figs, roasted shiitake mushrooms and fresh rosemary. And our personal fave? The Cajun contains cheddar and pepper jack cheeses, andouille sausage, green pepper, onions, celery, garlic and some gen-u-wine Cajun seasoning to kick things up a notch. Regardless of choice, each skillet (with size names that include Nosh, Major Munch, Mongo and Partay!) come bubbling hot and crusted with crunchy breadcrumbs. It'll be hard, but we highly recommend waiting a minute or two to let it cool before diving in. Cheese burns hurt...so good.
