John “Chappy” Chapman, who learned his way around a kitchen from his mother, always dreamed of owning and operating his own restaurant. That dream came true in 1984 when Chappy’s Seafood Restaurant opened in Long Beach, Mississippi. But when it was completely demolished by Hurricane Katrina, Chappy and his family relocated to Nashville, and in 2006 reopened as Chappy’s On Church. While many restaurants in Nashville offer Cajun-inspired dishes, no one does it quite like Chappy. What’s his secret? He maintains that he cooks with love. “Cooking with love means that we care about the food and how our customers feels about it,” he said. “When a plate comes back clean, that makes us happy.
