Three to a plate, the pupusas are little powerhouses of flavor, especially the ones stuffed with mushroom paté, whereas the bowl of creamy, citrusy roasted elote provides a lighter starter. Packing the most heat are the tender, achiote-marinated cochinita pibil—found on nachos and most notably inside a burrito—and the namesake chicken tinga, chipotle-braised and shredded, then loaded into a taco, burrito, or torta.
