This cozy spot, recently opened by chef and owner Jon Wallace, (formerly of Thistle Hill Tavern and Buttermilk Channel) and his fiancée, oenophile Jessica Soule, brims with a welcome nostalgia. With a passion for American cuisine and wine, Wallace keeps his intentions simple: “put out the food his parents cooked.” Start with the oysters oregenata paired with Soule’s choice of a crisp sparkling wine from New Mexico. The oysters are silky and creamy, dressed in a house-made oregano-infused aioli and topped with breadcrumbs. The duck breast is tender, paired with a sweet duck demi glace which cleverly balances the saltiness of the dish and the tartness of the brussels sprouts. For dessert, what could be more fun—and American—than funnel cake? Just like you remember it from the county fair, it's doughy inside and crisp on the outside, but with the added touch of vanilla mascarpone and raspberry sauce. He must have had great parents.
