Scout Notes: Buck Hussung, owner and founder of Stone House Q, is one of those people who believes that if something’s worth doing, it’s worth doing right. So prior to opening Stone House Q in October 2011, he spent two years touring the U.S. and sampling every type of barbeque he could find (we’d like to sign up for that job). Why barbeque? Buck has over forty years of fast food restaurant industry experience (remember Mrs. Winner’s? He brought that to Nashville) but longed to open his own family run, family friendly restaurant. With his love of barbeque and his wife Raleigh’s expertise in the kitchen (she’s a two-time Southern Living award-winning chef and cookbook author), Stone House Q seemed like the perfect way to combine both of their talents. Word to the wise: Raleigh’s loaded potato salad is dangerously delicious. As is the coconut cake. From Alabama’s mayo and vinegar-based sauce to the sweet, tomato-based sauce we’re used to here in Tennessee, Stone House Q offers barbeque samplings from seven different states. The menu goes beyond the classic pulled pork sandwich (they chop their pork instead of pulling it so you get those big, meaty chunks of awesomeness) to include St. Louis style ribs, Texas style beef brisket, and California rotisserie chicken. In addition to offering a variety of sandwich toppings (we went with bacon and a fried egg for our pork sandwich), we love that everything at Stone House Q is served without sauce, so you really get a chance to taste the quality of the meat and the expertise behind its preparation. And for you gluten-free eaters out there, the entire menu (aside from the buns, macaroni and cheese, and desserts) is gluten free. Yup, even the sauces. Both of them share the passion and have respect for the craft of smoking meats. So they began a journey to make it happen. After two years of eating their way through the BBQ landscape from Alabama to Texas and even California, STONE HOUSE Q was born. “There is nothing but righteous goodness that comes from our quality meats smoked or roasted low and slow”, says Scott. Pork butts are smoked until the meat is crispy outside with moist and tender insides- and righteous is the best way to describe it! Get it fresh sliced or chopped along with other great meats that roll out of our smoker including chicken, ribs and links.Scott and Buck know that one cannot live on smoked meats alone.
