Scout Notes: For those who hate commitment, is there any better meal than tapas? This thought hit me while dining at Souk Restaurant, an intimate little Moroccan tapas and wine bar on H Street. I knew my weakling taste buds couldn’t handle a full meal of sneak-up-on-you-spicy Merguez lamb sausages, but a small plate? Yes, please. I alternated between bites of Merguez, then cooled down with warm slices of pitas dipped in hummos and zaalouk, a new-to-me Moroccan dish made of roasted eggplant, tomatoes, garlic, and olive oil. That’s the other cool thing about Souk: if you want to explore authentic Moroccan cuisine, this is the place and friendly owner Driss Ouadrhiri is the perfect guide. He raved about the chicken bastilla special, which mixes saffron-marinated chicken, almond paste, cinnamon and orange blossom water for a sweet and savory entrée. “In a busy night, we serve about 50 of these. It’s a big seller,” said Driss. And so Souk can have more seating to serve all those chicken bastillas, a two-story deck with retractable awning is currently in construction.
