You may remember Woody himself from his first location on Irving Park and Southport before he moved Woody's to Lincoln Ave. Aimee and Tony, the owners since August 2008, are sticking with the tradition of Woody's original dry rub spice blend, and his sweet and tangy BBQ sauce, the sauce that TimeOut Magazine picked as the perfect compliment for our Pulled Pork sandwich.How do we do it?Well, we start we Prime meats hand-picked for us by a local family-owned purveyor. We dry rub those babies with a good massage 'till they're nice and coated. Then we let all those spice flavors sink in overnight.(who knows what they do while we are away :) We greet them with gratitude and load them into the smoker with a couple logs of Hickory. Each cut of meat has its own special temperature and time in the smoker. We simply enjoy all the wonderful smells while they slowly cook to perfection. To compliment our flavorful and tender meaty friends, we finish them on an open flame grill and serve 'em with sauce on the side.
