Scout Notes: For half a year, Pho Bar & Grill has been feeding H Street's day and night cravings for authentic Vietnamese cuisine. A fresh and healthy alternative to typical bar food, what makes this place even more remarkable is its ethos: "We do it all from scratch," said general manager Tori Wright. And she means everything, from the beef, veggie or chicken stock that makes the pho so phenomenal to the peanut sauce that might make you happy in your pants it's so good. "The food here is made the same way it is in Vietnam," said Kevin, who's been a fan of this Southeast Asian cuisine for years, but only opened Pho Bar & Grill when he and his business partner Napoleon stumbled upon the perfect storm. "We had the opportunity to purchase the building and I've been friends with our Vietnamese chef for years," he said. "We ended up meeting a lot of the other people who have businesses on the street and fell in love with the community. So, here we are!"
