A colorful palette, the mixed antipasto plate tastes as good as it looks. Combine the blue cheese tang of the Gorgonzola dolce with the silky smoothness of the bresaola; or the mildness of the Parmesan with the burn of the fire-roasted peppers. The crunch of skin into moist white flesh in the branzino alla griglia is multi-sensually seductive. And a side of—what? Creamy, spicy tomato raisin jam, a throwback to Sicily’s Moorish roots. In a namesake dish, pappardelle manzo brasato(yes, pappardella is a single noodle), the sweetness of the caramelized onions cuts the richness of the braised beef; swiss chard and garlicky bread crumbs complete the composition. Torta di ricotta is a round fluffy hat of ricotta cheesecake framed by strips of pureed raspberries sauce, slightly underbaked to lighten the density. Not too sweet, not very forgettable.
