Scout Notes: Italian food is a beautiful thing. And at Paolo's, a well decorated restaurant in Georgetown, it's practically fit for the pages of Vogue. If, of course, the magazine was less about lanky models and fashion, and more about crispy thin pizzas loaded with the freshest ingredients, heaping bowls of hand-crafted pasta and entrees and apps that look as well-designed as any haute couture ensemble. That's because everything here is made from scratch, from the olive tapenade served with a mug of tasty breadsticks when you sit down to the tiramisu that I highly suggest you order at the end of your feast. In between, expect the same made-to-order greatness. And I mean that both deliciousness and size. Of note is the Bisteca, a huge 18 oz. grass-fed cut of T-bone steak served up with a good-sized portion of fingerling potato hash and topped with tomato agra dolce sauce, arugula bermuda onion salad and a dash of Tuscan herb salt. If you're in a pasta mood, order the Tortellini Rose. All handmade and stuffed with gorgonzola, this hearty helping is served with mushroom confit, prosciutto, sun-dried tomatoes, rose sauce and pesto. Paired with a bottle of wine or a signature cocktail, and enjoyed in an atmosphere that promotes discussion (check out the local art inside or scope out some of the best people watching in DC on the corner patio) and it's no wonder this place has succeeded for over two decades.
