Scout Notes: I learned a couple of things while studying abroad in Chile a few years ago. The first is that Chile hosts some of the most beautimous natural wonders in the world. The second is that this country's street food is worthy of righteous praise. Whether you know Spanish or not, after eating here, the words chacarero, completo and empanadas de queso should be welcome additions to your vocabulary. Owned by Ricardo and Daniela Bopp, Paila has quickly become a city favorite (Washington City Paper even named it as one of the top places to eat) because of its reliance on fresh ingredients, and in particular, avocados, which means you'll see a lot of these green bulbs of protein-packed deliciousness getting cut, scooped and peeled in the open-air kitchen. "We prepare the ingredients every morning," said Ricardo. But then come the fun part—eating 'em. The chacarero starts with hot, thinly sliced marinated grilled beef, and is topped with avocado, tomato, jalapeño, mayonnaise and green beans. Similarly awesome is the completo. Far from a regular hot dog, this bad boy is topped with avocado, tomato, mayo and sauerkraut. There's even something stellar for vegetarians. Along with the empanadas de queso, try the Porotos Don Raul, which combines navy beans, butternut squash and noodles in a complex and hearty stew. Learning is delicious.
