Scout Notes: Pisco. It's a slightly obscure South American liquer that has flown somewhat under the radar up until now, but we feel you'll be hearing a lot about it pretty soon. Same goes for Raymi, the Peruvian restaurant in the Flatiron that has quietly been a go-to scene for nearby creative types for some time, and will quickly become your go-to as well. The expansive, sleek dining room has plenty of tables to comfortably consume its deliciously modern take on Peruvian cuisine (roasted pork belly 'Carapulcra' with Andean style potatoes, roasted peanuts and criolla; Arroz con Pato, with carnaroli rice, crispy duck leg and chalaca), but the real fun takes place at the two main bars—one for ceviche, offering fresh seafood spiked with native spices and ingredients, and one for pisco, pouring select labels as well as 30 house-infused options. If you're into family-style dining, like any true South American would be, join the restaurant for its Sunday Supper menu, where each dish on the menu is served for 2-3 guests to share. Pisco, after all, is best enjoyed among family.
