The Tamalitos vegetarians, wrapped in corn husks that sprawl boldly across the plate, convince you that tamales should always include a subtle bit of polenta and mozzarella along with poblanos. Lasagna starts out Italian but ends Mexican, with flour tortillas layered with besciamella sauce, mozzarella, Parmesan, and beef Bolognese-chipotle sauce. For tender filet mignon, go with tacos alla fiorentina accompanied by arugula and Grana Padano. Quesadilla al gamberoni, with shrimp, mozzarella, corn, and epazote, is for the Tusc-Mex seafood lover in you.
