Pupusas aren't hard to find in these parts, unless of course you're looking for a pupusa that will blow your mind. For that, we ventured a bit out of the city, but luckily, we didn't have to go all the way to El Salvador. Instead we wound up in Silver Spring, where we found one of the areas best kept secrets, La Casita. This decade-old family establishment does everything right when it comes to Salvadoran cuisine, from serving up heaping portions made from super fresh ingredients, to, yes, making the best pupusa we may have ever had. And, trust, we don't say that lightly. So, what's the secret? Well, one might be what they fill 'em with here. "One of our signatures is making our pupusas with mozzarella cheese," said Jaime Arbaiza, the manager. This gives them a unique gooey texture that most pupusas lack. But we didn't stop there because the proper meals here are also really, really good. The whole fried rockfish hits all the right spots, as does the classic Sopa de Res, made with beef and a small garden's worth of veggies. For lunch, the Pan de Pollo sandwich, which is so big it requires a knife and fork, has become a neighborhood favorite. And if all this wasn't enough to make our stomach high five our brain, the fruit juices and smoothies were welcome additions to complete this righteous meal.
