Chancing on a dining gem in a bland strip mall is one of this city’s greatest food adventures, and this not-so-secret treasure in West LA, tucked away in a corner spot off Santa Monica Boulevard, is just such a find. More elegant than the typical hole-in-the-wall, Hamasaku’s interior is a nice surprise, but even nicer is the mix of modern and traditional Japanese cuisine—robata skewers of char-grilled Kurobuta pork sausage and bacon-wrapped asparagus make a nice introduction. The rolls here are some of the area’s most inventive: Nori and tamago take a backseat to soy paper, and, for the intrepid, fusion-esque combos like the Sam—a baked crab roll with pesto, Parmesan, and truffle aioli—veer off into uncharted territory. Looking for an even bigger surprise? Just say the word… “omakase,” that is, and entrust your order to the house. Executive Chef Wonny Lee and Head Sushi Chef Yoya Takahashi—formerly of Sashi in Manhattan Beach—ensure that omakase selections are both whimsical and seasonal. Offerings might include the likes of Hanasaki crab, sea bream with matsutake, Japanese brown barracuda, or mantis shrimp. Complete the scene with an accompanying beverage from either Hamasaku’s considerable selection of Japanese micro-brews or the extensive sake menu, which includes a couple of bottles of the rare Flying Pegasus—not an actual gem, but as valuable as one.
