David Burke is very serious about his beef. So serious, in fact, that the eponymous David Burke's Primehouse uses an on-site chamber, tiled with Himalayan salt, to dry-age its meats for up to 75 days. The Chicago Tribune was left "swooning" over the "complex, earthy flavors that dry-aging brings out," and with today's Gourmet offer, you can get in on the beefy bliss: a select lunchtime entrée, an ice cream cone, and a glass of house red or white wine ($26, including gratuity and all other fees). As an added bonus, you'll also get a $10 gift card to be used on your next visit. Available every day from 11:30 a.m. to 3:00 p.m., the midday menu lets you pick one of four entrées. The first, and our favorite, option is the 40-day dry-aged steak burger: ten ounces of beef stacked high with garlicky spinach, bacon mayonnaise, and crispy shallots on a pillowy potato bun. But be warned—Chicago Magazine says, "This is a serious burger." For something a bit lighter, try the tuna salad sandwich with sweet roasted red peppers and zippy chorizo mayonnaise; the turkey club sandwich with applewood smoked bacon and citrusy lemon-pepper mayonnaise; or the classic Caesar salad, prepared tableside. And for dessert, you'll get an ice cream cone, to stay or go, from pastry chef Jove Hubbard. Opened in the luxe James Hotel in 2006, David Burke's Primehouse has become a major force in the Chicago dining scene—the Chicago Reader praised the restaurant for having "plenty of sizzle." Staying true to the style of a modern American steakhouse, the dining room is furnished with lots of dark leather, wood trimmings, and nickel chandeliers, making it a prime destination for lunch with a co-worker, friend, or fling.
