Scout Notes: Becoming a regular at Chef Tony's is like becoming a family member. Chef Tony himself will remember what you like, down to the type and brand of wine you prefer. I know this because this is what I saw when I stopped by the other day and a couple of regulars showed up. Indeed, Tony must have one heckuva memory because half the neighborhood folks are regulars at this popular Bethesda eatery. And if Tony keeps serving up some of the best food in town, I'm betting the other half will soon catch on, as well. Yes, the food here is as fresh as Tony's memory. "My specialty is seafood," he told me, while whipping up one of the prettiest and scallop dishes I've ever seen. With over two decades of experience, Tony's perfected his art of making tasty meals that rely on flavor and taste rather than trends and gimmicks. His influences run the gamut, said the Milan-born chef, whose called the DC area home most of his life. "I love Mediterranean flavors, and often borrow from Italian and Spanish cuisine," he said. The ingredients are also topnotch and locally sourced whenever possible. Pro tip: for a pre- or post-dinner treat, get one (or many) of the hand-crafted cocktails.
