Scout Notes: Nathanial Beaver, owner of Bria Bistro Italiano, has been in the restaurant business his entire life, as has his business partner and Bria’s executive chef, Tabor Luckey. Serving upscale Italian favorites along with custom creations (including gluten-free options), Bria’s open kitchen and lively bar create a warm, inviting atmosphere perfect for you next date night or dinner with friends. Located in Bellevue, Bria opened for business in September 2009. Why Bellevue? Well, Nathanial, who is from the area, longed to create a fine dining destination so that neighborhood folks could enjoy a great dinner without having to drive across town. We have to say, though, that for those of you who live outside the Bellevue area, the short (and super pretty—especially this time of year) drive is entirely worth it. The menu, which changes seasonally, consists of classic Italian favorites (with a Bria twist, of course), like eggplant parmesan and spaghetti and meatballs. Equipped with a wood fire oven, we’re especially fond of Bria’s flatbread and highly recommend the veggie focacce (marinara, spaghetti veggies, broccolini, caramelized onion, roasted peppers, marinated mushrooms, house mozzarella, truffle oil, cracked back pepper). As if all that weren’t awesome enough, Bria also offers several nightly specials, as well as an extensive wine list. Enjoy!
