"We want to use the best recipes from the best cooks in our lives," says owner Al, who set up shop in Castleberry less than a month ago (and, true to the restaurant's mission, named the eatery after his own mama). With downhome comfort food classics like pan-fried chicken and European classics like a true Belgian waffle (more on that later), B. Beatty's menu is a melting pot, and that's how Al likes it. "Every community has great recipes, and we want to use them." Let's talk about that Belgian waffle. It's a product of Al's own travels, and it's just like how they make 'em in Brussels: with pearl sugar, which melts at a higher temperature and gives the waffles a sweet, crunchy caramelization that'll make you wonder why all restaurants don't make them this way. Now, about that fried chicken. B. Beatty's only been open a few weeks, but they might already be a little famous for their 1/2 young chicken, pan-fried to a crunchy golden brown and served in the same cast iron pan it was prepared in.
