You've survived the summer on crisp Sauvignon Blancs and oaky Chardonnays, but now that the seasons have changed and the temperatures are dropping, you're more than ready for red. As long as you're not worried about the fact that you measure the passage of time with wine varietals, mark your calendars for this vintage Adventure: a day exploring the art of being a chef and winemaker, complete with a gourmet three-course lunch with wine pairings, a behind-the-scenes winery tour with tastings, a blending lesson, and round-trip transportation. We'll start by heading to our check-in point in Golden, where our team of aged-to-perfection connoisseurs will be waiting to clock us in. From there, we'll ride out to Aspen Peak Cellars, a micro-winery and bistro in Conifer, Colorado. The minute we arrive, we'll be introduced to the Inn's proprietors and certified chefs, who'll treat us to a three-course lunch with wine pairings (butternut squash bisque with Chardonnay; pork tenderloin Wellington in a white truffle bordelaise with 285 Fusion; and chocolate mousse with mocha Port). We'll also receive recipes for each dish, and access to sign up for exclusive online videos with Chefs Marcel and Julie Flukiger demonstrating the cooking techniques. Once we've ticked lunch off our list, we'll get back on the bus and make our way to the winery's facility in Bailey, where we'll receive a behind-the-scenes tour before participating in a "blending" competition. Aspen Peak Cellars will provide samples of red wine for each of us to combine into our own special blend, which will then be judged by the APC staff.
